To get a wildcard, you need to romance pinatas a lot. Leafos will tell you if you got a wildcard. Their base value is multiplied by 10.

Have you read the Helpers article already?

I'm not sure what you mean by "deleted." If you're talking about helpers that never made it into the final game, there's a brief comment about them in the article.
